This recipe comes from Linda
at Whats Cooking America These are light and delicate little
treats with a sweet/tart lemony flavor that perfectly pairs with
tea.
The instructions on the
website sounded a little intimidating, but I had no trouble with
them.
High Tea Lemon
Cookies
2 cups butter, room
temperature
2/3 cup confectioners
sugar
1 teaspoon grated lemon
zest
1/2 teaspoon pure
vanilla extract
2 cups all-purpose
flour
1 1/2 cups
cornstarch
Apparently the butter being at
room temperature is KEY. I left mine out on the counter over night
and had no issues. Preheat oven to 350 degrees F. In a large bowl,
beat butter until creamy looking. Add powdered sugar; mix until
light and fluffy. Add lemon zest and vanilla extract; beat well.
Add flour and cornstarch into butter mixture and mix well until
well combined.

1/3 to 1/2 cup freshly
squeezed lemon juice
4 cups confectioners
sugar
I used a bag to pipe the icing
on and it worked fine. The website says to dip the cookies in the
icing.
